Bramble vinegar

  1. Place the bramble blackberries in a bowl and cover with vinegar. Put a plate on top of the mixture and a heavy object on top of the plate and push down lightly.

  2. Leave for 3-5 days.

  3. Stir every day.

  4. Uncover and give the mixture a stir. Then, pressing down with the back of a ladle or spoon, carefully mash the berries to release their juices.

  5. Next, sieve the mixture into a large saucepan, left with the liquid.

  6. Add the sugar to the liquid, stir and heat until boiling.

  7. Simmer for 15 minutes and then simply pour into sterilised bottles.

  8. Keep for a few months and then enjoy in the winter.
